This breakfast is loaded with heart-healthy ingredients like chia seeds, flax seeds, blueberries, and steel cut oats which give it a great texture. Make this the night ahead and bake it up in the morning!

Ingredients
- 1 cup quick cooking steel cut oats
- 1 Tbsp flax seeds
- 1 Tbsp chia seeds
- 1 tsp cinnamon
- 1/4 tsp sea salt, optional
- 1/4 cup sliced almonds
- 1 cup blueberries, fresh or frozen
- 1 1/2 cups almond milk
- 1 tsp vanilla
- 2 Tbsp raw honey or maple syrup

Instructions
- Layer half of the blueberries in a greased 8-inch cast iron skittle or baking pan.
- Mix together the oats, flax, chia, salt, and almonds. Spread the mix evenly over the berries. Top with the remaining berries.
- Mix together the milk, vanilla, and honey. Pour over the mixture in the pan. It will be very liquidy. Cover and refrigerate overnight.
- Preheat oven to 375 degrees.
- Bake for 30-40 minutes. Allow to cool slightly and serve with extra maple syrup, if desired.

Hi Erin I make a similar oatmeal,that is hearty and kids love ,with apples instead of blueberry and bulk it up with finely chopped walnuts and Hemp seed. But I will try this blueberry version soon.
